Banana Crumb Muffins

Makes: 10

These are basic banana muffin made extraordinary with a brown sugar crumb topping that will melt in your mouth.

Ingredients:

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1/2 teaspoon salt

3 bananas, mashed

3/4 cup white sugar

1 egg, lightly beaten

1/3 cup butter, melted

1/3 cup packed brown sugar

2 tablespoons all-purpose flour

1/8 teaspoon ground cinnamon

1 tablespoon butter

Directions:

Preheat oven to 375* Lightly grease 10 muffin cups, or line with muffin papers.

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, spices and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir banana mixture into flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    I know they are good for you, but I can’t stand the taste of them and the tolerance to the smell is getting better … Long story dating back to when I had my jaw (purposely) broke and reset. Mom was trying to help but only made me sick of the fruit.

    1. Bless your heart! Sorry to hear that! Mashed peaches are a nice replacement…like peach? As Bill says “honey & garlic” are equally as wonderful…not so much in the muffins 😉 Wait, this gives me an idea for a savory muffin! 🙂 Sorry about the broken jaw…that had to be painful!

        As for the jaw they had to un-wire it five days after I had surgery. No pain and that is when I found out I can’t tolerate 90% of the meds out there.
