Candy Corn Jello Shots

Makes 20 shots

Ingredients:

1 small box orange-flavored Jell-O (3 oz)

3 envelopes Knox unflavored gelatin

7 oz. sweetened condensed milk (1/2 of a 14 oz. can)

2 cups water

1 cup vanilla or cake vodka (more if you like your shots stronger)

yellow food coloring

tall shot glasses (I used these)

Directions:

Pour 1 cup of water into a small saucepan with 2 envelopes of unflavored gelatin. Warm the water and gelatin over low heat, stirring occasionally, until all the gelatin has dissolved (about 5 minutes). Remove from the heat and add 1/2 can of condensed milk to the mixture. Stir until combined. Add 2/3 cup vanilla vodka. Divide concoction in half. Evenly distribute the first half of your mixture throughout your 20 shots…about 1/3 full. Refrigerate shots until firm (30-40 minutes).

When the first layer is firm, pour another 1 cup of water into a saucepan and add 1 last envelopes of gelatin to make your middle layer. Warm the water until the gelatin dissolves, remove from heat, and stir in the box of orange Jell-O until that dissolves as well. Add 1/3 cup vanilla vodka. Evenly distribute orange layer on top of white layer and refrigerate until chilled.

When the orange layer is solid, take the second half of the milk mixture that you set aside in the first step and add in a few drops of yellow food coloring. If the mixture has already started to set, put it in the microwave until warm, stir until lumps dissolve. Distribute your yellow layer on top of the orange and put it back into the fridge until set.

Candy Corn Popcorn

Ingredients:

6 cups of popped popcorn

Salt

1/4 cup butter

3 cups mini marshmallows

1 teaspoon vanilla

2 drops of yellow food coloring

1 cup candy corn

1 cup of M&M Candies fall color or yellow and orange mix

¾ cup of mini marshmallows

Directions:

Pop corn, add salt to taste. Store bought kettle corn works nicely too. Place into large bowl.

Marshmallow mixture: Melt 1/4 cup of butter in a medium sauce pan.  Once the butter is melted add 3 cups of mini marshmallows. Stir until marshmallows are melted.  Turn off heat.  Add 1 vanilla and yellow food coloring.

Pour about 3/4 of the marshmallow mixture over the popcorn. Using a wooden spoon, gently fold marshmallow mixture into the popcorn until it is mostly covered.Pour the popcorn onto a cookie sheet covered with foil.  Drizzle remaining marshmallow mixture over the popcorn.  Do not mix. You will need the top sticky so the remaining ingredients have something sticky to stick to. Mix in candy and marshmallows while popcorn mixture is still warm. May sprinkle with fall colored candy sprinkles as well. Allow to cool completely. Break apart into pieces and serve.
