Jalapeno with a Capital “J” This cheesy, juicy burger combines many flavors of the Old West and packs a little punch–just a little 😉 Spicy, sweet and slightly salty with an extra added kick! Serve with potato salad, Cowboy beans (the recipe will be served up shortly) and a crunchy ear of grilled yellow corn…Tarnation! Rattle your hocks and get out the tarantula juice! Wagon Train, Ho! Ingredients
2 lbs ground beef
6 jalapeno peppers, seeded and chopped–watch out for those seeds! If you want a little more “heat in the meat” add a few
1 cup crumbled bleu cheese; feta may be substituted
1/4 cup finely minced onions
2 teaspoons minced garlic
2 tablespoons soy sauce
6 slices pepper jack cheese
6 hamburger buns, split
1/2 cup Southwestern mayonnaise, add 1/2 teaspoon each, cumin and chili powder, plus 1 tablespoon of Jim Beam or good quality whiskey to mayo
1/4 cup BBQ sauce
2 tomatoes, sliced
1 avocado, peeled & sliced
6 slices of cooked crisp bacon
1 red onion sliced thin
6 leaves of lettuce
1/4 teaspoon salt
Directions
In a bowl, combine beef, jalapeño peppers, blue cheese, onion, garlic, soy sauce, salt & pepper to taste.
Mix well, and form into 6 patties.
Grill patties for 7 minutes on each side or until springy/spongy in the middle.
Place slice of cheese on top of each patty, cover grill, and grill until cheese melts.
Combine mayo with cumin & chili powder. Spread equally on bottom of each bun. Top with BBQ sauce, lettuce, avocado, tomato slices, bacon and red onion. Sprinkle with a little sea salt. Serve while hot! Or should I say “hotter?” Buon Appetito! Ciao! Grazia Y’all!
