Here’s a healthy, energy-filled and nutritious way to cool down during these end days of summer. Sigh, yes, I said “end” Or at least “ending.” Melons are so plentiful right now so seize the opportunity to enjoy cool and refreshing melon coolers. Watermelon, casaba, honeydew and other melons in season work just as nicely. The cantaloupe flavor is subtle, but still pleasantly present 🙂 The addition of chia seeds boosts the nutritional value leaps and bounds. Chia seeds were an important food for the Aztecs and Mayans back in the day.They prized them for their ability to provide sustainable energy. in fact, “chia” is the ancient Mayan word for “strength.” Take 5 and re energize!
Ingredients:
1/2 medium cantaloupe; peeled & cubed
3 tablespoons of honey or to taste
1 cup honey or vanilla Greek yogurt
1 cup milk; regular, almond, coconut or soy
1/2 cup pineapple or orange juice
1 ripe banana
1 tablespoon chia seeds (optional)
2 cups ice
Makes 2 generous 20 ounce servings–without ice 🙂
Directions:
Place all ingredients in blender and puree until smooth. Garnish with a wedge of cantaloupe and banana. I sugared the rim with orange sugar for a bit of extra added sweetness and of course for the eye candy effect 🙂 Enjoy!
