The Magical Meatloaf: Spicy Red Pepper Meatloaf with Zesty Brown Sugar Tomato Glaze

What’s magic about this meatloaf? This deliciously slightly spicy meatloaf, kissed with warm spices such as ginger, allspice and cinnamon, will keep them coming back for more and they won’t even know why! It’s my most requested! This little loaf of love wears a brown sugar, ketchup allspice glaze to keep it moist and packed with flavor and offers a hint of spice in between as well—not too much, just a kiss.  This is our household favorite! Mystery unveiled 🙂

Serves: 8

Ingredients:

1/2 cup packed brown sugar

1/2 cup ketchup

1/4 teaspoon allspice

1 1/2 pounds lean ground beef, turkey or chicken

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/2 cup parsley; chopped fine

½ cup milk

2 eggs

1 1/2 teaspoons salt

1/4 teaspoon ground black pepper

1 small onion, chopped fine

1 red pepper chopped fine

2 stalks of celery chopped fine

2 cloves of garlic chopped fine

1/4 cup prepared salsa (optional)

3/4 cup finely crushed saltine crackers or plain bread crumbs

Directions:

Preheat oven to 375 degrees. Lightly grease a 5×9 inch loaf pan.

Mix brown sugar, ketchup and allspice in small bowl; set aside

In a mixing bowl, mix remaining ingredients thoroughly and shape into a loaf. Spread ketchup, brown sugar mixture over top of meatloaf; leaving 1/2 inch around edges.

Bake in preheated oven for 50 minutes to 1 hour or until juices are clear. Serve with garlic mashed potatoes and a side of coleslaw spiked with crushed pineapple. Great the next day for sandwiches too–if it makes it into the next day 🙂

  3. I love meat loaf, will give this a try. I will use, 1/2 lb. ground beef, 1/2 lb. ground chicken and 1/2 lb sausage, I like this combination. I have never used spices, will give them a try. Thank you.
