I’ve found these golden little gems to be extremely scrumptious, satisfying and filling—2 or 3 with a cuppa and you’re ready to begin or end your day or complete activities somewhere in between. They’re great afternoon snacks, lunchbox additions, after school munchies; lip smacking “anytime” delights! GUILT FREE!!
Makes 30- 1” nuggets 75 calories each
1/2 cup natural peanut, almond, pecan or cashew butter, creamy or chunky
1/4 cup nonfat dry milk powder
1/4 cup unsweetened flaked coconut
1/3 cup rolled oats
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
1/4 cup wheat germ
1/4 cup honey or agave
Combine peanut butter, milk powder, and coconut in a large mixing bowl. Stir in oats, ground cinnamon, wheat germ, and honey until thoroughly combined.
Shape mixture into 1 inch balls. Roll in cocoa, toasted coconut or oats. Chill thoroughly before serving; store remaining nuggets in refrigerator–if they make their way there at all 🙂
