
Ingredients
4 tablespoons butter, melted
3 eggs, beaten
3/4 cup brown sugar; packed
2 tablespoons flour
1 teaspoon vanilla extract
3/4 cup corn syrup *
3 tablespoons bourbon liquor or orange juice
1 1/2 cups chopped toasted almonds or toasted chopped pecans
1 cup shredded coconut
3/4 cup chocolate chips
1 (9-inch) unbaked pie shell (homemade; (recommended) refrigerated, boxed or frozen
Homemade whipped cream, recipe follows or you may use canned
Chef’s Notes *No corn syrup? Mix 1 cup sugar with 1/4 cup of water; stir to dissolve
Homemade Whipped Cream:
1 cup heavy cream
4 tablespoons confectioners’ sugar
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees
Melt butter in a small saucepan. While butter is melting, add beaten eggs to a medium sized bowl. Stir in brown sugar, flour, vanilla extract, corn syrup and bourbon until combined. Add melted butter. Mix in almonds, coconut and chocolate chips Mix all together. Pour mixture into pie shell.
Bake for 50 to 55 minutes.
When ready to serve top with a dollop of whipped cream; a few extra almonds and chocolate shavings or drizzles of chocolate sauce are optional, but impressive!
