    1. haha! I agree, Osyth! Roasted eggplant–especially fire roasted–we smoke ours (not literally) 😉 and the flavor this imparts is wonderful. Love to you & your daughter, hon ♥

    That’s a great idea to be vegetarian for a little bit. Hummus is great no matter what kind of beans its made of. I like black bean or kidney bean hummus. 🙂

    1. I agree, Gina! I love your ideas for using different beans for hummus. I see premade one quite a bit in the stores, but this never really registered until your comment! I love cannellini beans and will give this a go. Thanks so much!!
